The Polar Bear!

How could I forget?! Until I was uploading the Bears pics - we totally saw another BEAR the week before! A POLAR Bear!...where you might wonder?!

Let me tell you!

My parents are back in the USofA! and living in Indiana. Well, while searching for housing my dad was offered a nice lake-side cabin to sleep at (my mom has to overnight w/ Grandma)...SO, when Bobby and I went to visit them, WE got to stay at the cabin too!

There was enough taxadermy action to fill a LODGE - a LODGE! - but this was a small 1-bedroom cabin! - Luckily dad offered to sleep on the couch under the Polar Bear and Bobby and I got the single beds, I Love Lucy & Ricky Ricardo style!

So we went to our 2nd Bears game and had amazing seats!!! 18 rows off the field - but out of the sun, which was a bummer, I love me some sun!

The BLACKOUT

Bobby and I got tickets for the tiebreaker between the Minnesota Twins and the Whitesox last night! It was a FANtastic game! Everyone wore black - Jim Thome HOM-IE, won it for us w/ the only score of the game - a homerun right after the 7th inning stretch! Seriously it was such a tense game, so much energy. Sold out crowd, we were up cheering for every 2-count strike or 3-count ball. Johnny Danks pitched AMAZING! Pierzynski saved the game at the plate w/ a throw from Ken Griffey JR!...Couldn't ask for more!

So I think I've recruited Bobby over to the dark side!, or SOUTH side that is!

A couple weeks ago...the country

So a couple weeks ago we got to visit Aaron and Elisabeth in Streator, it was fantastic! We hiked in the morning, went apple/pear picking and then they cooked pulled pork for us, side of sweet corn, coleslaw AND peach cobbler for dessert hot out of the oven w/ vanilla ice cream!

Bobby and I knew we wore them out when they, Definitely - Maybe, went to sleep to the rented movie!

Just stuff laying around in the fridge...

So seriously, I had all this stuff in my fridge except green onions and bought some on the way home...well after I stopped to shoe shop first! This recipe is amazing and low in points (1 pt/fritter)! I didn't even use oil...just PAM. And I was wondering what they'd taste like, it might be the first time i've had zucchini, and it tastes like potatoe pancakes/hashbrowns/french fries, but a WAY healthier alternative. You can't beat that!

Zucchini Fritters

Ingredients:
1 small zucchini (grated)
1/2 cup flour
1 egg
1 green onion (chopped)
1 tablespoon cilantro (chopped, or parsley)
salt and pepper to taste
2 tablespoons oil

Directions:
1. Mix the zucchini, flour, egg, green onions, cilantro, salt and pepper in a bowl.
2. Heat the oil in a pan.
3. Spoon the zucchini mixture into the pan and cook until golden brown on both sides, about 4 minutes per side.
